Stir in 2 tablespoons of curry powder, cook for 1 min, then gradually add a 400g tin of chopped tomatoes and simmer until the oil separates. Add 450g cubed chicken breasts, cook 2–3 min on high, then pour in 150ml warm water and simmer for 15 min until the sauce thickens. Season with coriander leaves before serving. Serves 2–4.
